Our New Favorite Peach Recipe
We’re swimming in peaches here in Utah and are finding all sorts of new ways to use them! Our blog manager, Emily, came across this simple, delicious dessert at a local knit night (she’ll tell you any day that our local yarn/fabric/gift shop, Harmony, is the brightest jewel in all of Provo, UT). This recipe was shared by Rachel Harmon.
Peach & Raspberry Dessert
Serves: 8
3 cups heavy whipping cream
1 tsp almond extract
⅓ cup powdered sugar
8 oz neufchâtel cheese
1 TBSP lemon zest
Fresh lemon juice from 1-2 lemons
8 fresh peaches, peeled and sliced
6 oz fresh raspberries
1 box waffle cone cookies (Trader Joe’s has some delicious ones!)
Beat the whipping cream and almond extract with a hand mixer on medium/high speed, slowly working in the powdered sugar to taste. Once the cream is starting to stiffen, add in the neufchâtel cheese on low speed. Beat to desired consistency. Mix in the lemon zest and lemon juice. Serve cream mixture over peaches and raspberries with a waffle cone cookie (or 2!) on the side. Enjoy!
