Homemade Caramels

Ingredients:

  • 2 cups brown sugar

  • 1/2 cup light corn syrup

  • 1 can sweetened condensed milk

  • 1/2 pound butter (I have found that quality butter is worth it for this recipe - my favorite is kerigold!)

  • 1 teaspoon vanilla

Instructions:

  • In a medium sauce pan on low heat, melt butter. Then add sugar, corn syrup, and sweetened condensed milk. Bring to a boil over medium heat then turn the heat down a bit to maintain a simmer. Attach a thermometer to the side of the saucepan. Stir consistantly for about 30 minutes or until caramels reach 247 degrees. If you don’t have a candy thermometer, you can stir for 30 min and check the consistency by spooning a small amount of caramel into a small bowl of ice water. How it sets in the water is a good indication of how it will be once it has cooled. Remove from heat and stir in vanilla.

  • Pour into a heavily buttered pan (11x7) and let cool. Once cooled cut into squares and wrap into wax paper.

Add to a cute holiday bag or plate of cookies and use as a personal gift to your friends, family and neighbors!
